Cheddar cheese omelet with bacon and jalapeno salsa

low carb breakfast

This makes a lovely Sunday low carb breakfast. The fresh salsa adds a real kick.

Ingredients:

5 eggs beaten

1 tablespoon butter

1/4 cup shredded cheddar cheese plus 2 tablespoons

1 jalapeno, finely diced, seeds removed

1 medium tomato, finely chopped

2 tablespoons diced red onion

Melt butter in medium saute pan. Add beaten eggs and cook over medium low heat with lid. When eggs start to get firm, sprinkle 1/4 cup cheese and cover. Let cook until cheese is melted. Take a large spatula and fold eggs in half. Let cook until eggs are no longer runny.

Meanwhile, combine the chopped jalapeno, tomatoes and onions in a small bowl and salt to taste.

Sprinkle the remaining cheese on omelet and top with crumbled bacon. Serve with salsa.  Low carb breakfast.

Voila!  A tasty, easy to prepare low carb breakfast!
