Ingredients

  • 4 slices bacon cooked & crumbled
  • 6 large eggs beaten
  • 1 cup shredded cheese
  • 1 tablespoon butter
  • 2 cups lettuce chopped
  • 1 medium avocado diced
  • 2 tablespoons salsa

Directions

  1. Cook bacon in frying pan on medium heat until crisp. Remove to paper towels to drain. Beat eggs and add butter to pan with bacon grease. Reduce heat to medium low. Add eggs and place lid on pan. I cook eggs at a low heat because I do not like brown burnt spots on my omelets. While eggs are cooking, chop lettuce and place on plates. Dice avocado and put on top of lettuce. Spoon salsa on top of avocado. When the eggs in the pan start to firm, sprinkle cheese on top and cover with lid. When the eggs are firm enough to slide easily when you tilt the pan, take a large spatula and fold the eggs in half. Replace lid and cook until no longer liquid. Slice omelet in half and place one half on each plate. Sprinkle each omelet with bacon and serve.
