Turkey Burger with Yogurt Cucumber Sauce

Ingredients

  • 1 pound ground turkey
  • 4 ounces feta cheese crumbled
  • 1/4 cup red onion diced
  • 1 tablespoon oregano
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 3 tablespoon olive oil divided
  • 1/2 cucumber peeled and finely diced
  • 6 ounces greek yogurt
  • 1 tablespoon lemon juice

Directions

  1. Prepare Yogurt Sauce:
  2. Peel cucumber and sliced lengthwise into quarters. With a paring knife, remove the seeded parts of each quarter. Cut lengthwise into narrow strips and dice. Place in a bowl. Add salt, lemon juice and olive oil to taste. Spoon yogurt over cucumbers and stir until well blended. Place in refrigerator while making turkey burgers.
  3. Heat a grill or frying pan to medium heat. Place ground turkey in a large bowl and add the feta cheese, the diced onions, oregano, lemon zest and salt. Combine thoroughly and form into patties. Brush the grill with olive oil and grill the turkey burgers until completely cooked.
  4. Serve with the yogurt sauce.
