This is a simple yet bursting with flavor egg dish made with what I had on hand. My husband said it was the best eggs he ever ate!

  • 12 avocado cubed
  • 4 large eggs whipped
  • 2 tablespoons butter
  • 4 slices bacon cooked
  • 4 tablespoons cheddar cheese shredded
  • 1 medium jalapeno pepper chopped fine, seeds removed
  • 2 tablespoons salsa


  1. Cook bacon until crisp. Set aside. While bacon is cooking, melt butter in medium size saucepan and add chopped jalapeno. When jalapeno is softened, add the whipped eggs. Cook on medium-low heat, stirring often. When eggs are still soft, but almost dry, add shredded cheese. Continue cooking until eggs are firm and cheese is melted. Divide eggs on two plates and top with avocado cubes. Spoon salsa in center of eggs on each plate and top with crumbled bacon.
