If you crave pizza but don’t want the carbs, this is a great low carb craving buster!
Pepperoni (as much as you want)
2 cups Romaine lettuce
4 or 5 Fresh mushrooms, sliced
6 Black olives
1/4 Red onion, sliced very thin
1 medium Tomato, chopped. You can also use grape or cherry tomatoes, sliced in half
1/2 cup shredded Mozzarella Cheese
2 teaspoons Italian Herbs
2 tablespoons Olive Oil
1 tablespoon Red Wine Vinegar
Line a baking sheet with foil and lay the pepperoni slices in a single layer on the sheet. Place in 350 degree oven and let bake until crispy. About 15 minutes.
While pepperoni is baking, assemble the salad.
Tear the lettuce leaves in small pieces and put in salad spinner to rinse and dry. Then place lettuce in a large bowl.
Add the sliced mushrooms, tomatoes, and black olives. Distribute them evenly over the lettuce.
Sprinkle the olive oil and red wine vinegar on top of the salad and then top with the mozzarella cheese.
Using a spatula, transfer the pepperoni from the baking sheet to the salad. Don’t worry if some of the oil gets in the salad. It just makes it taste better!
To finish, lightly dust the pepperoni with the Italian herbs and eat your low carb pizza!
