Pork Chops with Roasted Apples and Caramelized Onions2014-11-08

Thick cut pork chops
olive oil for frying
Frozen Spinach (thawed and drained well)
1 tablespoon butter
1/4 cup cream
1/4 cup shredded Parmesan cheese
Start with the apples and onions as these will take the longest. If you want less carbs, you can just roast the onions and skip the apples.
Salt and pepper the pork chops and fry in olive oil until browned on the outside and cooked on the inside.
While the pork chops are cooking, add the butter to a small sauce pan.
Add the spinach and stir. Cook on low until spinach is warm, then add the cream and Parmesan. Continue cooking on very low heat until the pork chops are done.
Serve pork chops with the creamed spinach and apples and onions.
