Deviled eggs are a great quick low carb snack. I have tried other spices in deviled eggs, but simple is sometimes best.

Ingredients

  • 6 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon paprika

Directions

  1. Fill large pot with cold water. Add a couple tablespoons salt. Heat on high until just about ready to boil. With slotted spoon, lower eggs into water. Set timer for 10 minutes and let cook. When timer goes off, remove from heat and cover with a lid. This method is the best for having easy peel eggs.
  2. After about 10 minutes or whenever you are ready, drain the water from the pot and rinse eggs with cold water. Peel the eggs and cut in half with a knife. Pop out the yolks in a mixing bowl and place the whites on a plate. Add the mayonnaise and mustard to the bowl and mash with a fork until smooth. Using a small teaspoon, drop the egg mixture into the egg whites. Sprinkle with paprika.
